Inspired by my friend and fellow sailor, Cathy, who is not only one of my pit crew mentors, but also an excellent artist. Cathy collaborated with Juan Lama to create the art for Sailor's Grey that features Juan's photograph of Albatross, the beautiful boat upon which we race.
This red tea combines the flavors Cathy loves most in her daily tea: Lavender, wildflowers and bergamot, along with licorice and granulated honey for sweetness.

Red (black) tea contains 40-60mg of caffeine per 8 oz cup. As the tea ages, the caffeine levels decline over time because light and leaf oxidation reduce caffeine. Thus, an aged red tea that is decades old may not contain much caffeine at all. If you have the willpower to resist drinking this tea and to instead store and age the tea, the taste profile will only deepen.

Brewing Recommendations
Brewing Recommendations
Serving Size: 3-5g (1-2 tsp) per 150ml purified water.
Ideal Brewing Vessel: Glass tea pot with infuser; porcelain or ceramic tea pot with strainer
Flash Brewing: This tea can be enjoyed for multiple steepings if it is steeped only 15 seconds at a time. Add 10 seconds to each subsequent brew and steep up to 6 times.
Steeping: Boil water to 212F/100C. Steep for 1-2 minutes before pouring the liquor into a tea cup. Add sweetener if desired.
Latte: Prepare as advised above and top with steamed milk and/or frothed milk.
Note: Brewing for a longer period of time or using a higher quantity than recommended could cause the lavender to overpower the flavor of the tea.
