This eastern beauty oolong is named after Queen Natalija, who herself was an eastern beauty and also the most beloved queen of Serbia. 

This tea is from the birthplace of eastern beauty tea in Northern Taiwan, Beipu.  The sweetness of eastern beauty tea is a result of leafhopper bugs, who bite the leaves in the early summer.  Leafhopper bugs' saliva cause the leaves to oxidize, grow crooked, and turn red around the edges.  The plant responds by producing aromatic compounds that protect it and change the aroma and flavor of the leaves. 

Because the bug-bitten leaves start to oxidize while still on the tea tree, Eastern Beauty is the highest oxidized of all Oolong teas.  Once the tea reaches the processing plant, it undergoes additional oxidation through an arduous withering process, resulting in one of most delicious oolong teas available.

Brewing Recommendations

Serving Size: 3-5g per 100ml of purified water.

Ideal Brewing Vessel: Porcelain tea pot or gaiwan; or high-fired, high profile thin clay teapot.

Steeping: Boil water to 212F/100C and then wait for the water to stop bubbling before pouring the water down the inside of the brewing vessel, not directly on the leaves. Brew for 30 seconds, then replace the lid and pour the liquor into a gong dao bei (fairness pitcher) before apportioning into tea cups.  Add 15 seconds for each subsequent brew. Remove the lid of the brewing vessel to allow the leaves to cool between steepings. Flash brewing in this manner ensures this tea can be brewed up to 5+ times and brewed again the following morning if left overnight.
